Cristina Topham of Sonoma's Spread Catering presents a delicious menu of specialties from her Lebanese heritage.
Chef Cristina is a Bay Area native and third-generation Lebanese-American who has catered for Wine Country events since 2016, combining the influences of Lebanon with her French training and experience from cooking around the world. Her menu:
Fattoush Salad - Chopped Vegetable Salad with Spiced Pita Chips & Sumac Vinaigrette | Kibbeh Karaz - Lamb Kibbeh Meatballs with Sour Cherry & Pomegranate Sauce, Vermicelli Rice & Lemony Greens | Mahoullabiya - Milk Pudding with Pistachios, Almonds & Orange Blossom Syrup
Her culinary journey began when she graduated from the French Culinary Institute in New York City and became a line cook at Les Olivades in Paris, moving to Julia's Kitchen in Napa and The Savoy in New York City. She later joined the yachting industry to cook her way through Europe, the Caribbean, and Mexico.
